Rice and Chicken Curry

This rice and chicken curry is a wonderfully flavorful one-pot meal that’s almost impossible to put down and walk away from! The great thing about how tasty this meal is is that you can feel free to simply adjust any of the spices and seasonings as you might like. This will allow you to create a really personal meal with no effort at all. How ideal!

 

There are a number of things that you might be interested in adding to this meal, since it may not feel too complete on its own. While it will certainly be enough food, it will be the same flavor throughout. We would suggest adding some mint yogurt to the top or the side of the dish after you’ve plated it, to add another flavor to the plate that will be wonderfully tasty and easy to eat.

Alternatively, you could serve this meal with a couple of onion bhajis to present a meal complete with a small side. The choices are nearly endless!

Ingredients

  • 2 cups of cubed chicken breast
  • 2 tbsp butter
  • 2 tbsp curry powder
  • ½ cup coconut milk
  • ½ cup fresh parsley
  • ½ cup peas

Method

  1. First of all, you need to make sure that you prepare the chicken correctly. Start off by simply chopping up chicken breasts, and measuring out the cubes until you’ve got around two cups worth. Of course, the number of breasts that you’ll need depends upon the size of them - you can likely eyeball it a little in the supermarket, though.
  2. After you’ve prepared the chicken, saute it in the butter over medium heat. This part of the cooking process essentially functions as a way to ensure that your chicken is perfectly cooked before you add any of the other ingredients.
  3. When the chicken is cooked, add the curry powder and coconut milk, before sauteing for another two minutes to be sure that the chicken absorbs those flavors. We would suggest taking a piece of chicken out of the pot and slicing it in half to see how well it has absorbed those flavors - the turmeric in the curry powder should have dyed most of the chicken a light yellow color, not just the surface.
  4. Add the Natural Heaven Rice at this point, along with the parsley and the peas. Stir the mixture for another two minutes to ensure that the heat of the dish transfers into the room temperature rice.
    1. We would suggest placing a lid on the pot at this point in the recipe, as it is a great way to make sure that no heat is lost to the room during this period. Instead, it’s all going to warm the different sections of the meal that you’re making. Thankfully, none of the ingredients added here take much heating at all.
  5. Finally, serve! This recipe is a great one since it’s so complete all on its own, but there are plenty of things you could add to make the recipe feel a little more like a full meal.
