  • 1 cup fresh spinach
  • 1 grilled chicken breast, sliced (or rotisserie for ease)
  • 1/4 avocado, sliced
  • 2 tablespoons tahini
  • 2 tablespoons plain Greek yogurt
  • Juice of 1/2 lemon
  • 1-2 teaspoons Mamma Chia organic chia seeds
  • Salt, to taste

Instructions:

  1. Heat the Natural Heaven Brown Rice in a skillet over medium heat until warmed through, about 2-3 minutes.
  2. In a small bowl, whisk together the tahini, Greek yogurt, lemon juice, and salt until smooth and creamy.
  3. Stir in the Mamma Chia seeds and let the dressing sit for 5 minutes to thicken.
  4. Build the bowl: start with the warm rice as the base, then top with fresh spinach, sliced grilled chicken, and avocado.
  5. Drizzle generously with the lemon-tahini-chia dressing and serve immediately.
