Brown Christmas Rice

Ingredients

2 cups Natural Heaven Hearts of Palm Brown Rice

1/2 cup dried cranberries, rehydrated

1/2 cup chicken broth

1 tablespoon butter

1/2 cup finely chopped celery

2 tablespoons finely chopped onion

1 teaspoon chicken seasoning

1/2 cup chopped toasted walnuts

1/4 cup fresh parsley, chopped

1 cup grated Parmesan cheese

Salt and black pepper to taste 


Directions

 15 minutes prep and cook time.


Serves: 4

Instructions:

  1. In a skillet over medium heat, melt the butter. Add the onion and celery and sauté until tender and lightly browned.
  2. Add the brown rice to the skillet and stir to coat with the vegetables and butter. Pour the chicken broth over the rice, vegetables, and cranberries.
  3. Bring to boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid has been mostly absorbed.
  4. Remove from heat and stir in the chopped walnuts, parmesan cheese, parsley, salt, and pepper. Serve the rice hot.
