Stuffed Avocados with Southwest Rice

Ingredients

  • 1 packet of Natural Heaven Southwest Rice 
  • 2 ripe avocados, halved and pitted
  • 1 teaspoon lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • ¼ cup crumbled feta cheese or vegan cheese
  • Salt and pepper to taste

 15 minutes prep and cook time.


Serves: 4


Instructions:

  1. Heat the Southwest Rice in the microwave for 1 minute. 
  2. Scoop out a small portion of the avocado flesh to make more room for the filling (set the scooped-out flesh aside).
  3. In a bowl, mix the Southwest Rice with the scooped avocado flesh, lemon juice, and olive oil. Season with salt and pepper to taste. 
  4. Fill the avocado halves with the mixture.
  5. Top with crumbled feta cheese and sprinkle with chopped cilantro.
  6. Serve with sweet potato chips on the side.
