Crispy Congri Rice Cakes with lime dressing

Ingredients

  • For the Congri Rice Cakes: 
  • 1 pouch Natural Heaven Hearts of Palm Cuban Style Congri Rice
  • 1 large egg
  • 1/2 cup chickpea flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil or avocado oil, for pan-frying
  • For the Green Lime Dressing: 
  • 3 tablespoons fresh lime juice (about 1 lime)
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup mayo
  • Salt and pepper to taste

A golden, crispy take on hearts of palm rice cakes paired with a bright, creamy green lime dressing. These savory cakes are pan-fried until perfectly crisp on the outside and tender inside, then finished with a fresh, zesty herb sauce for a light but satisfying bite.

Instructions:

  1. Make the rice cake mixture: In a bowl, combine the Natural Heaven Hearts of Palm Cuban-Style Congri Rice, egg, flour, salt, and black pepper. Mix until fully combined.
  2. Pan-fry the rice cakes: Heat olive oil or avocado oil in a non-stick skillet over medium heat. Spoon the rice cake mixture into the skillet and cook for about 3–4 minutes per side, until golden and crispy.
  3. In a blender, combine all dressing ingredients. Blend until smooth and creamy. Set aside.
  4. Assemble and serve: Drizzle the dressing on top of the crispy Congri rice cakes.
