Hearts of Palm Rice Pudding (Arroz con leche)

Ingredients:

  • 1 package of Natural Heaven White Rice
  • 4 cups of whole milk (or plant-based milk if preferred)
  • 1 cup of water
  • 1 cinnamon stick
  • 1 piece of lemon peel (optional)
  • 1 can of condensed milk (approx. 395g)
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • Ground cinnamon (to sprinkle on top)

Instructions:

  1. Prepare the hearts of palm rice: Drain and rinse the Natural Heaven White Rice thoroughly to remove any palm flavor. Set aside.
  2. Heat the milk: In a large saucepan, add the 4 cups of milk, cinnamon stick, and lemon peel. Cook over low heat, stirring occasionally, until the milk is warm (but not boiling).
  3. Add the hearts of palm rice: Add the Natural Heaven White Rice to the warm milk and cook over low heat for 10-15 minutes, stirring occasionally to let the rice absorb the flavors.
  4. Add condensed milk and sugar: Stir in the condensed milk and sugar, mixing well. Continue to cook on low heat for another 10-15 minutes, stirring constantly until the mixture thickens slightly.
  5. Flavor with vanilla: Add the vanilla extract and cook for an additional 5 minutes. Remove the cinnamon stick and lemon peel.
  6. Serve: Let it cool slightly before serving. Sprinkle with ground cinnamon to taste.

This rice pudding is a lighter, low-carb option thanks to the Natural Heaven White Rice, while still being creamy and flavorful. Perfect for a healthier dessert!
