Ingredients

  • 1 pouch Natural Heaven Hearts of Palm Brown Rice
  • ½ cup orange segments
  • ½ cup ice
  • 1 cup cooked shredded chicken
  • ½ can coconut milk
  • 1 tablespoon curry powder
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon chopped cilantro
  • Salt and pepper, to taste

This Chicken Coconut Curry is a rich, comforting dish made with Natural Heaven Hearts of Palm Rice, a low-carb, gluten-free rice alternative. Simmered in creamy coconut milk with tender chicken and spices, it’s a flavorful healthy curry recipe that’s perfect for easy weeknight dinners.

Instructions:

  1. Finely mince the garlic and ginger. Sauté them in a hot pan, add half of the curry powder, the vegetables, and mix well.
  2. Add the chicken and coconut milk; simmer for 5 minutes until creamy.
  3. Stir in the hearts of palm brown rice and the remaining curry powder until fully combined.
  4. Sprinkle with chopped cilantro and serve hot
