Ingredients

  • 1 pouch Natural Heaven Southwest Hearts of Palm Rice
  • 3 eggs, scrambled
  • 1 tomato, diced
  • 1 small white onion, finely chopped
  • 1 tablespoon chopped cilantro
  • 1 tablespoon olive oil
  • ½ cup shredded cheese
  • Avocado slices
  • Whole wheat tortillas
  • Salt and pepper, to taste

This Southwest Breakfast Burrito is a bold, protein packed way to start the day, made with Natural Heaven Hearts of Palm Rice as a low-carb, gluten-free alternative to traditional grains. Filled with eggs, veggies, and our Southwest prepared meal, it’s an easy healthy breakfast recipe that delivers big flavor without the heaviness.

INSTRUCTIONS

  1. Heat the opened Southwest rice pouch in the microwave for 1 minute. Set aside.
  2. Prepare the pico de gallo by mixing tomato, onion, olive oil, cilantro, salt, and pepper.
  3. Heat a pan with olive oil and scramble the eggs.
  4. Add the shredded cheese and season with salt and pepper.
  5. Lay the tortilla flat and fill with eggs, Southwest rice, pico de gallo, avocado, and extra cheese if desired.
  6. Roll the burritos and serve immediately.
