Brown Hearts of Palm Rice with Roasted Pumpkin

Ingredients

1 box of brown hearts of palm rice

Olive oil

1 cup chopped white onion

1 teaspoon minced garlic

1/2 cup white wine

1 cup vegetable broth

Roasted and cubed pumpkin

1 cup grated Parmesan cheese

1 tablespoon dried basil

1 tablespoon red pepper flakes

1 tablespoon chopped cilantro


Directions

 15 minutes prep and cook time.


Serves: 2

Instructions:

  1. Heat olive oil in a large skillet. Sauté onion and garlic until softened.
  2. Add brown hearts of palm rice and toast for a minute, stirring constantly.
  3. De-glaze the pan with white wine and add vegetable broth. Bring to a simmer.
  4. Add roasted pumpkin, Parmesan cheese, basil, red pepper flakes, and salt and pepper to taste.
  5. Cook until the liquid is absorbed and the rice is tender.
  6. Garnish with fresh cilantro and serve immediately.
