Brown Rice Bowl with Hearts of Palm and Avocado

Ingredients

1 box Natural Heaven brown hearts of palm rice

2 avocados, sliced

1 cup cooked chickpeas

1 cup fresh spinach

1 cup diced plum tomatoes

2 tablespoons of olive oil

1/2 cup lemon juice

1 teaspoon cumin

1/2 cup Greek yogurt

Salt and pepper to taste

Directions

 10 minutes prep and cook time.


Serves: 2

Instructions:

  1. In a small bowl, mix Greek yogurt, lemon juice, salt, pepper, cumin, and olive oil. Set aside.
  2. In a large bowl, combine brown hearts of palm rice, chickpeas, tomatoes, avocado, and spinach.
  3. Add yogurt dressing and mix well. Serve immediately.
