Creamy Mushroom Hearts of Palm Risotto

Ingredients

1 pouch Natural Heaven Hearts of Palm White Rice
1 tbsp butter or olive oil
1 cup sliced mushrooms
1 small garlic clove, minced
½ tsp thyme
Salt and black pepper, to taste
⅓ cup vegetable or chicken broth
¼ cup heavy cream or half-and-half
¼ cup grated Parmesan
Fresh thyme or parsley, for topping

September is National Rice Month, so we’re making a creamy risotto with a veggie twist. Natural Heaven White Rice is made from hearts of palm, a sustainably grown vegetable.

Instructions:

Heat the butter or olive oil in a pan over medium heat. Add the mushrooms and sauté until tender and lightly browned. Remove from the pan and set aside.
Add the Natural Heaven Hearts of Palm White Rice to the same pan and sauté for 2–3 minutes to release its natural moisture and prevent it from becoming watery.
While the rice is still sautéing, add the garlic, thyme, salt, and freshly ground black pepper. Season generously; the mild flavor of hearts of palm makes it a great base for building bold, savory flavors.
Return most of the mushrooms to the pan, reserving a few for topping. Add the broth and cream, then stir in the Parmesan until everything is well combined and creamy.
Reduce the heat and let the risotto gently simmer for about 10 minutes, stirring occasionally. This gives the Hearts of Palm Rice time to absorb the sauce and develop a richer flavor.
Top with the reserved mushrooms, fresh thyme or parsley, and a little extra Parmesan if desired.
