Ingredients

  • 1 pouch Natural Heaven Hearts of Palm Medallions
  • 4 cups mixed greens (spinach, arugula, spring mix)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1 small cucumber, thinly sliced
  • 1 mango, peeled and diced
  • ¼ cup red onion, thinly sliced into rings
  • ¼ cup toasted almonds or pecans
  • 2 tablespoons feta or goat cheese
  • Citrus Honey Dressing:
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Pinch of salt and black pepper

Instructions:

  1. In a small bowl, whisk together all dressing ingredients until smooth and emulsified.
  2. Arrange the greens on a large serving platter. Add cucumber and onion slices on top.
  3. Layer the hearts of palm, tomatoes, mango, and avocado over the greens.
  4. Sprinkle toasted nuts and crumbled cheese.
  5. Drizzle with the citrus dressing and toss gently to combine.
