Cuban Rice Burrito with Aji Amarillo Sauce

Ingredients

  • 1 Pouch of Natural Heaven Cuban Rice 
  • 2 gluten-free burrito tortillas
  • 2 tablespoons aji amarillo sauce
  • ½ cup toasted yellow corn
  • Avocado slices
  • 1 tablespoon pickled red onion, julienned Cilantro
  • Optional: plantain chips 


Directions

 10 minutes prep and cook time.


Serves: 2

 

Instructions:

  1. Heat the Cuban rice in a hot skillet.
  2. Warm the tortilla.
  3. To assemble the burrito, place avocado, aji amarillo sauce, toasted yellow corn, Cuban rice, more aji amarillo sauce, pickled onion, and plantain chips on the tortilla.
  4. Roll up and close the burrito. Optional: brown in a skillet until the tortilla is crispy.
  5. Cut in half and serve.
