Ginger Chicken Fried Rice

Ingredients

  • 1 box of white hearts of palm rice
  • 2 tablespoons of olive oil
  • 1 tablespoon sesame oil
  • 2 cups of chicken, cut into strips
  • 2 tablespoons honey
  • 1 teaspoon minced garlic
  • 1/2 cup sliced green onions
  • 1 cup blanched peas
  • 2 eggs, beaten
  • 1/2 cup of soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup shredded carrots
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil and sesame oil in a large skillet over high heat. Add chicken and garlic. Cook until chicken is browned.
  2. Add green onions, peas, and carrots. Cook for 2 minutes.
  3. Push vegetables to the sides of the pan and create a well in the center. Pour in the beaten eggs and scramble.
  4. Stir in the cooked rice, soy sauce, rice vinegar, honey, and season with salt and pepper.
  5. Cook until heated through and all ingredients are well combined.
  6. Garnish with sesame seeds and serve immediately.
