Gluten-Free Chicken and Vegetable Stir-Fry

Ingredients

1 box of white hearts of palm rice

2 tablespoons sesame oil

2 cups cubed chicken

¼ cup soy sauce

1 cup colorful bell peppers, sliced

2 cups peas

1 teaspoon minced garlic

1 teaspoon minced ginger

1 cup chopped white onion

Salt and pepper to taste


Directions

 25 minutes prep and cook time.


Serves: 2

Instructions:

  1. Heat sesame oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove from skillet and set aside.
  2. Add onion, garlic, and ginger to the skillet. Sauté until fragrant.
  3. Stir in bell peppers and cook until softened.
  4. Add cooked rice, cooked chicken, soy sauce, and peas. Toss to combine.
  5. Season with salt and pepper to taste. Serve immediately.
