Heart of Palm Brown Rice & Egg Breakfast Bowl

Ingredients

1 cup hearts of palm brown rice 

2 fried or cooked eggs

½ avocado, sliced

½ cup spinach

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon black pepper


Directions

 10-12 minutes prep and cook time.


Serves: 2

Instructions:

1. In a skillet, heat the olive oil over medium heat. 

2. Sauté the spinach until wilted, for about 2-3 minutes.

3. Season with salt and pepper to taste.

4. Assemble the bowl with the heart of palm brown rice, eggs, sliced avocado, and sautéed spinach.

5. If desired, add halved cherry tomatoes.
