1. In a skillet, heat the olive oil over medium heat.
2. Sauté the spinach until wilted, for about 2-3 minutes.
3. Season with salt and pepper to taste.
4. Assemble the bowl with the heart of palm brown rice, eggs, sliced avocado, and sautéed spinach.
5. If desired, add halved cherry tomatoes.
