Heart of Palm Rice & Zucchini Patties

Ingredients

  • 2 cups of Natural Heaven White Rice 
  • 2 eggs 
  • 1 cup grated zucchini (squeeze out excess moisture) 
  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite) 
  • 2 tablespoons chopped fresh herbs (parsley, chives, or cilantro) 
  • 1 small garlic clove, minced (optional) 
  • Salt and pepper to taste 
  • Olive oil 
Directions

 20 minutes prep and cook time.


Serves: 4


Instructions:

  1. In a large bowl, combine the heart of palm white rice, eggs, grated zucchini, shredded cheese, herbs, garlic, salt, and pepper.
  2. Mix well until the mixture holds together. Form small patties with the mixture.
  3. Heat a non-stick skillet over medium heat and add a little olive oil.
  4. Cook the patties for 3–4 minutes on each side until golden and crispy.
  5. Remove from the pan and drain on paper towels if needed.
  6. Sprinkle with parsley to taste and serve hot.
