Heart of Palm Spaghetti with Garlic Lemon Salmon

Ingredients

1 package hearts of palm spaghetti 

2 salmon fillets

1 tablespoon olive oil

1 clove garlic, minced

1 tablespoon lemon juice

1 tablespoon chopped parsley

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes 


Directions

 30-35 minutes prep and cook time.

Instructions:

  1. Preheat your oven to 200°C (400°F). Season the salmon fillet with salt, pepper, and lemon juice.
  2. Bake for 12-15 minutes, or until cooked through and flaky. While the salmon is baking, heat the olive oil in a skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  3. Add the hearts of palm spaghetti to the skillet. 

  4. Sprinkle with chopped parsley, salt, and pepper to taste. Cook for 3-5 minutes, stirring gently to heat through. 

  5. Serve the hot heart of palm spaghetti alongside the baked salmon.
