Hearts of Palm Lasagna with Spinach, Mushrooms, and Ricotta

Ingredients

1 box of hearts of palm lasagna sheets

3 tablespoons of olive oil

1 cup chopped white onion

1 clove garlic, minced

1 cup diced plum tomatoes

2 tablespoons tomato puree

1 teaspoon dried oregano

1 cup of ricotta cheese

1 ½ cups mozzarella cheese

1 ½ cups sliced mushrooms

1/2 cup of spinach, chopped

Salt and pepper to taste 


Directions

 15 minutes prep and cook time.

Instructions:

1. In a saucepan, heat olive oil and sauté onion and garlic until softened. Add diced tomatoes, tomato puree, oregano, salt, and pepper. Simmer for 5 minutes.

2. In a separate skillet, sauté mushrooms until tender. Add spinach and cook until wilted.

3. Preheat oven to 375°F (190°C).

4. Assemble the lasagna: In a baking dish, layer lasagna sheets, tomato sauce, mushroom and spinach mixture, and ricotta cheese. Repeat layers until all ingredients are used, ending with a layer of lasagna sheets.

5. Top with mozzarella cheese.

6. Bake for 30-35 minutes, or until bubbly and golden brown.

Tip: For a richer flavor, add a layer of béchamel sauce between the lasagna sheets and the tomato sauce.
