Hearts of Palm Rice Salad with Grilled Chicken

Ingredients

1 box of white hearts of palm rice

2 cups cherry tomatoes, halved

1 cup cucumber, diced

3 cups mixed greens 

2 tablespoons balsamic vinegar

2 tablespoons olive oil

1 chicken breast

Salt and pepper to taste


Directions

 20 minutes prep and cook time.

Instructions:

  1. Grill the chicken: Grill the chicken breast until cooked through and slightly charred. Let it rest for a few minutes before slicing.
  2. Combine ingredients: In a large bowl, combine the hearts of palm rice, cherry tomatoes, cucumber, mixed greens, and sliced chicken.
  3. Dress the salad: Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste.
  4. Serve: Toss to coat and serve immediately.
