Lemon Garlic Chicken with Brown Rice & Veggies

1. In a hot skillet, heat oil and sear chicken breasts seasoned with oregano, salt, and pepper until fully cooked. Add lemon juice and garlic mixture over the chicken, then set aside.
2. In the same skillet, sauté broccoli and carrots, season with salt and pepper to taste. Add brown hearts of palm rice and mix well. Sprinkle with fresh parsley.
3. To serve, place rice with vegetables in the center of a plate and top with chicken fillets.
Tip: For a richer sauce, deglaze the skillet with a splash of white wine after cooking the chicken and before adding lemon juice and garlic.
