Low-Carb Lemon Herb Hearts of Palm Rice with Grilled Salmon

Serves: 2 |
1. In a large non-stick skillet, heat olive oil. Sear salmon on all sides until golden brown. Season with salt and pepper, then set aside.
2. In the same skillet, add hearts of palm rice, lemon zest, parsley, thyme, lemon juice, salt, and pepper. Mix well and cook for 3 minutes.
3. To serve, place hearts of palm rice on a plate, top with grilled salmon, and garnish with chopped chives and balsamic glaze.
Tip: For a richer flavor, marinate the salmon in a mixture of lemon juice, olive oil, garlic, and herbs for at least 30 minutes before grilling.
