Mediterranean Rice Salad Cups

Ingredients

  • 1 pouch of Natural Heaven Mediterranean Rice 
  • 1 cup cherry tomatoes, halved 
  • 1 cup cucumber, diced 
  • 1 cup blueberries 
  • ¼ cup crumbled feta cheese (optional) 
  • 2 tablespoons chopped fresh parsley or mint 
  • 2 tablespoons of olive oil 
  • 1 teaspoon lemon juice 
  • Salt and pepper to taste 
  • 4 romaine lettuce leaves

 10 minutes prep and cook time.

Instructions:

  1. In a large bowl, combine the Mediterranean Rice with cherry tomatoes, cucumber, blueberries, feta cheese, and chopped herbs. 
  2. Drizzle the olive oil and lemon juice over the salad, then gently toss everything to coat evenly. 
  3. Season with salt and pepper to taste.
  4. Spoon the salad mixture into the romaine lettuce leaves.
  5. Serve chilled with a splash of balsamic vinegar—these colorful salad cups are perfect for your 4th of July barbecue or picnic!
