Southwest Breakfast Pie Skillet

Ingredients

  • 1 package Veggies Made Great Loaded Breakfast Potato Bakes, cut into cubes
  • 1 cup fresh spinach, chopped
  • 1 bell pepper, diced
  • 1 cup shredded cheese
  • Salt and black pepper, to taste

Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C) and grease a 9x13-inch baking dish.
  2. Press the cubed Veggies Made Great Potato Bakes firmly into an even layer on the bottom of the dish, then top with the Natural Heaven Southwest Rice.
  3. Scatter the chopped spinach and diced bell pepper over the top, mixing gently to combine.
  4. Sprinkle shredded cheese evenly across the top. Season lightly with salt and pepper.
  5. Bake for 30-35 minutes until the cheese is golden and bubbly and the edges are crispy. Let rest 5-10 minutes before slicing and serving.
