Creamy Mash

Instructions:

1. In a pot over medium heat, heat the olive oil. Add the onion and garlic, and sauté until softened. Stir in the dried basil and chili pepper.
2. Add the blanched spinach and vegetable broth. Bring to boil. Using an immersion blender, blend the soup until smooth.
3. Stir in the hearts of palm puree until the soup reaches your desired consistency. Season with salt and pepper to taste.
4. Garnish with chopped parsley and cilantro. Serve hot.
